FOOD 
Zaragoza's local cooking is that of the Aragonese cuisine which is one of the
most straightforward and wholesome cuisines in Spain. Popular local specialties
include lamb and goat roasted on the spit, lamb and vegetable stew, las
magras con tomate which is slices of fried ham dipped in tomato sauce,
bacalao al ajoarriero (cod with garlic and eggs), pollo a la chilindron
(chicken in a cured ham sauce), recao (beans, potatoes and rice), and
huevos al salmorejo (eggs with asparagus sauce). There are also dishes
featuring wild boar and pheasant on many restaurants' menu.
For dessert, there is a wide variety to choose from ranging from fresh fruit
grown in the region to excellent regional sweets such as turrones, mostillo,
roscones (ring-shaped cakes), and el guirlache (almond brittle).
There is also an exotic "drunk" peach or pear cured in wine in the earthenware
vats of Carinera.
The region of Aragón is also renowned as a fine wine-producer, some of which
include the 18 degrees Cariena, Valle de
Jalón, Borja, Paniza and Lecera. Ask the chef for what goes best
with your dish, and you're sure to have an unforgettable meal in Zaragoza.
